Pasta Frittata

A frittata is an egg-based Italian dish similar to an omelet or crustless quiche, with the addition of a variety of ingredients such as cured meats, cheeses, vegetables or even pasta like the one here.

A pasta frittata is great way to use up left over spaghetti or make one from scratch adding ingredients you like. I had some left over linguine that was made with a simple chunky tomato sauce and pancetta that I decided to make into a frittata. The photo directions below show the procedure.

Put the left over pasta in a bowl. Mix together three eggs and a nice big spoonful of ricotta.

Pour the egg and ricotta mixture over the pasta and stir together.


Heat a tablespoon of olive oil in a non stick frying pan and add the pasta egg mixture. Cook until set and brown and crunchy on the bottom.


Slide the frittata onto a plate. Place the frying pan on top of the plate and flip over. 


Should look like this. 
Continue cooking the other side.

When the other side is done, remove to a plate and drizzle with olive oil and sprinkle with grated cheese.

 
Serve warm or at room temperature.
